Our salt is made from seawater gathered from Blueskin Bay. We first place it in holding tanks to let any particulate matter settle to the bottom, leaving us with beautiful clear seawater. We test the seawater and final salt produced to ensure it is safe to consume. The seawater is then placed in shallow covered ponds, and it then takes several weeks for the freshwater to evaporate, leaving behind lovely coarse salt. This process uses nothing but the heat from the sun.

The size of the salt crystals depends on a few factors, like the rate of evaporation, temperature, and concentration of the salt in the seawater. Though our rate of producing salt may be slower than some sunnier parts of the country, this results in large crystals and we’ve got plenty of time to wait.

We plan on extending our range to include flavoured salts such as garlic salt, lemon salt, toasted cumin salt and more. We also plan to make a salt with locally harvested seaweeds, which are a good source of iodine.
